Hannam & Co. loaves are not made with flour. Or yeast. They contain no grains, and hence no gluten*…or any other binding agent, for that matter. No xanthan gum, no tapioca flour, no potato starch, or eggs, or milk. They certainly have no sugar added and in fact, in the case of the Flatwhite and Superseed varieties, contain no measurable sugars at all**. They are bread for people who can’t or don’t eat bread. Coeliacs, diabetics and vegans love them, but so do plenty of people with no dietary needs other than the simple pleasure of biting into a crunchy, nutty slice of seeds.
Applied heat brings out the full nutty texture and taste of the bread. We recommend that you toast the bread well: set your toaster to max; some like to toast it more than once.
A flat-iron toaster is ideal if you want an all-over gold colour and crunch, and prefer a cracker-like texture – ideal with a cheese board after dinner. Dry-pan toasting in a non-stick pan is the perfect solution if you are hiking or camping, and cooking on gas or open flame.
We freeze our Hannam & Co. to make them last up to 6 months. Being preservative-free, it must be kept refrigerated or frozen. The fridge “best by” date is two weeks, and six months in the freezer. The breads are quite robust in that they can be frozen and defrosted then frozen again, but they are very temperature sensitive – if kept at room temperature or in a fridge that is not working at >4C, they will spoil.
