Hannam & Co. loaves are not made with flour. Or yeast. They contain no grains, and hence no gluten*…or any other binding agent, for that matter. No xanthan gum, no tapioca flour, no potato starch, or eggs, or milk. They certainly have no sugar added and in fact, in the case of the Flatwhite and Superseed varieties, contain no measurable sugars at all**. They are bread for people who can’t or don’t eat bread. Coeliacs, diabetics and vegans love them, but so do plenty of people with no dietary needs other than the simple pleasure of biting into a crunchy, nutty slice of seeds.
Despite its name, buckwheat is not a grain but the seed of a flowering shrub, closely related to rhubarb. It’s seeds are rich in many of the minerals that are needed for healthy living – manganese, copper, magnesium, phosphorus, potassium, iron and zinc – as well as several B-vitamins, dietary fibre and resistant starch, which studies suggest may lower blood sugar level.
They are also mucilaginous, meaning that once they are soaked and ground, they don’t require any binding agent to set during baking.
We freeze our Hannam & Co. to make them last up to 6 months. Being preservative-free, it must be kept refrigerated or frozen. The fridge “best by” date is two weeks, and six months in the freezer. The breads are quite robust in that they can be frozen and defrosted then frozen again, but they are very temperature sensitive – if kept at room temperature or in a fridge that is not working at >4C, they will spoil.
